a) No Jedi = better stories - i.e., the authors don't have to jump through hoops trying to figure out a way to even reasonably challenge a Jedi (especially without automatically killing the non-force-users) and/or neutralize their abilities so that they don't just uncover the entire plot in 5 minutes. (Anyone who's tried to GM a Star Wars RPG will know exactly what I'm talking about, here.) Besides, there are like a handful of Jedi in the galaxy even at the height of the Old Republic - focus on a trader and/or smuggler, that's where your episodic fun is. (Different planet every week, different jam to get out of. Like Firefly, only probably not as good and guaranteed not to get cancelled.)

b) Lucas will ruin this and then go on to wipe Shadows of the Empire from continuity when he needs a new gold Ferrari or something and makes 3 more shitty movies. (Nothing pisses off Lucas more than a superior writer interfering with his perfect, infallible vision of the SW universe.) After that he will rape your dog and trip your grandma down some stairs.
